Chili Rellenos(Yields 4 Servings) - cooking recipe

Ingredients
    12 roasted, peeled Big Jim chilies
    12 pieces Monterey Jack cheese (3 x 1-inch)
    2 eggs, divided
    3/4 c. flour
    1 1/2 tsp. baking powder
    1/2 tsp. salt
    water
    oil for frying
Preparation
    Make a slit in each chili and stuff with a piece of cheese. Roll each chili in flour and set aside.
    Heat oil in large, deep pan.
    Beat egg whites until peaks form.
