Sweet Potato Souffle - cooking recipe
Ingredients

2 lb. sweet potatoes
1 stick margarine
1 1/2 c. sugar
1 large can crushed pineapple
3 eggs, separated
Preparation

Boil sweet potatoes (in the skins) until soft.
Peel as soon as you can handle them.
Mix in egg yolks, margarine, pineapple and sugar.
(Save egg whites for meringue.)
Place in 1 1/2-quart baking dish.
Bake at 375\u00b0 for about 15 minutes.
