Ingredients

2 c. cooked rice (preferably brown)
2 c. milk
1/2 c. nonfat dry milk
1/4 c. brown sugar
1 Tbsp. butter or margarine, melted
2 eggs, well beaten
1/2 lemon rind, grated
1/2 tsp. vanilla
1/4 c. raisins
bread crumbs or wheat germ
Preparation

Mix all ingredients together, except crumbs or wheat germ. Grease a 1-quart casserole dish or individual custard cups and sprinkle bottom with some crumbs or wheat germ. Pour in pudding mix and sprinkle more crumbs on top. Bake at 350\u00b0 for 20 minutes or until a knife inserted in center comes out clean.
