Three-Citrus Chicken Salad - cooking recipe
Ingredients

9 c. torn mixed greens such as romaine, Boston or bibb lettuce, arugula, curly leaf lettuce or red leaf lettuce
2 c. cooked chicken, cut into strips
1 1/2 c. grapefruit sections (about 2 grapefruits)
1 1/2 c. orange sections (about 3 oranges)
1 c. thinly sliced red onion
2 Tbsp. olive oil or salad oil
2 Tbsp. lime juice
2 Tbsp. water
1 tsp. Dijon mustard
1/8 tsp. salt
1/8 tsp. pepper
Preparation

Divide greens among 6 plates. Arrange chicken, grapefruit sections, orange sections and red onion slices on top of greens.
