Spaghetti Squash Primavera - cooking recipe

Ingredients
    1 medium spaghetti (about 3 lb.)
    1/2 lb. zucchini
    1/2 lb. broccoli
    1 small red pepper
    1/4 lb. snow peas
    2 Tbsp. olive oil
    1 shallot, minced
    1 c. heavy cream
    1/4 c. butter or margarine
    3/4 c. grated Parmesan cheese
    1/4 tsp. salt
    dash of freshly ground pepper
Preparation
    With fork, prick surface of spaghetti squash. Place in large kettle; cover with cold water. Bring to boiling; reduce heat. Simmer, covered 50 to 55 minutes or until squash is tender.
