Ingredients

1/3 c. firmly packed brown sugar
1 1/2 Tbsp. cornstarch
1 2/3 c. skim milk
1/3 c. frozen egg substitute, thawed
1 Tbsp. low-fat margarine
1 tsp. vanilla
26 vanilla wafers
3 medium bananas, sliced
1 egg white
2 Tbsp. sugar
Preparation

Combine brown sugar and cornstarch in a saucepan.
Gradually add milk.
Cook, stirring constantly, until mixture comes to a boil.
Cook 1 minute.
Stir one-fourth of hot milk into egg.
Add to remaining hot mixture.
Cook until thick.
Stir in margarine and vanilla.
Cool.
Put layer of vanilla wafers, then layer of bananas and pour custard over.
Repeat layer.
Beat egg whites until stiff.
Add 2 tablespoons sugar.
Spread on top.
Bake at 325\u00b0 for 20 minutes or until golden brown.
