Parsley And Wheat Salad (Middle Eastern)(Tabooleh) - cooking recipe

Ingredients
    2 bunches parsley
    5 tomatoes, chopped fine
    1 bunch scallions, chopped fine
    1 tsp. salt
    1/2 tsp. allspice
    4 Tbsp. olive oil
    juice of 4 lemons
    1/2 c. fine grain wheat (soaked in water for 1/2 hour or microwave a few minutes and let stand)
Preparation
    Combine ingredients in deep bowl.
    Toss together and serve with crisp romaine lettuce leaves or tender grape leaves.
    If you want to be creative add a cucumber, chopped fine, or any garden vegetable to your own liking.
    Delicious with Syrian bread.
    Make a pita sandwich!
