Broccoli Muffins - cooking recipe
Ingredients

1 3/4 c. all-purpose flour
1 c. quick cooking oats
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1 c. milk
1/3 c. vegetable oil
1 egg, lightly beaten
1 c. chopped fresh broccoli, blanched
1/2 c. shredded Cheddar cheese
Preparation

In a large bowl, combine flour, oats, sugar, baking powder and salt.
In a small bowl, mix milk, oil and egg; stir into dry ingredients just until moistened.
Fold in broccoli and cheese. Spoon into greased or paper-lined muffin cups.
Bake at 400\u00b0 for 18 to 20 minutes or until top springs back when lightly touched. Yield:
1 dozen.
