Hot Shoestring Potato Salad - cooking recipe

Ingredients
    1 lb. medium Russet potatoes, cut into julienne strips
    1/2 c. chopped red bell pepper
    1/4 c. finely chopped green onions
    1 Tbsp. rice wine vinegar
    2 tsp. hoisin sauce
    2 tsp. sesame seed, toasted
Preparation
    Soak potatoes in cold water 15 minutes; drain and pat dry with paper towels.
    Arrange potatoes in a single layer in a large shallow pan coated with cooking spray.
    Bake at 450\u00b0 for 30 minutes, stirring every 10 minutes.
    Combine potatoes, bell pepper and green onions in a medium bowl.
    Combine vinegar and hoisin sauce in a small bowl.
    Pour over potato mixture, tossing gently. Sprinkle with sesame seed and serve immediately.
    Yield:
    4 servings.
