Golden Fried Shrimp - cooking recipe

Ingredients
    1 1/2 lb. raw shrimp (26 to 30)
    2 egg whites and 1 egg yolk
    1 tsp. salt
    1/4 c. flour
    1/2 c. crushed saltines
    Puritan canola oil
Preparation
    Butterfly shrimp and wash under cold running water.
    Combine egg and salt in a shallow bowl.
    In another container, combine flour and cracker crumbs.
    Dip each shrimp in egg mixture, then roll in cracker mixture.
    Repeat procedure.
    Heat oil until 365\u00b0. Fry shrimp for 2 or 3 minutes until golden brown.
    Drain on absorbent paper.
    Makes 6 servings.
