Zesty Carrots - cooking recipe

Ingredients
    14 to 16 carrots, peeled and cut on angle
    1/2 c. cooled carrot juice
    2 Tbsp. grated onion
    1 Tbsp. horseradish sauce
    2/3 c. mayonnaise
    2 Tbsp. parsley
    1/2 small bag Pepperidge Farm stuffing mix
    salt and pepper to taste
Preparation
    Cook carrots for 10 minutes.
    Reserve 1/2 cup carrot juice. Place carrots in shallow baking dish.
    Mix mayonnaise, onion, horseradish, parsley, carrot juice and salt and pepper.
    Pour over carrots.
