Morning Market Salad - cooking recipe

Ingredients
    1/2 c. white vinegar
    1/2 c. olive oil
    1 tsp. dried oregano (fresh when in season)
    2 cloves garlic, minced
    1/2 tsp. salt
    2 c. small cauliflower florets
    2 c. small broccoli florets
    2 medium carrots, peeled and cut into short, thin strips
    1 (16 oz.) can red kidney beans, drained
    2 c. (8 oz.) Mozzarella cheese
Preparation
    In large bowl, whisk together first five ingredients.
    Add vegetables; toss lightly.
    Cover and chill approximately 3 hours, stirring occasionally.
    Makes 8 servings.
