Taco Rice Skillet - cooking recipe
Ingredients

1 lb. hamburger
1 medium onion, chopped
1 (16 oz.) can sliced tomatoes
1 c. converted brand rice
1 (1 1/4 oz.) pkg. taco seasoning mix
1 c. shredded Cheddar cheese
2 c. shredded lettuce
sour cream
1 to 2 avocados, chopped
1 bag nacho chips
Preparation

Brown hamburger with onion in 10-inch skillet with lid.
Drain fat off.
Drain tomatoes into a 2 cup measuring cup, reserving juice.
Chop up tomatoes and place them in a separate dish.
Add water to juice to make 2 1/2 cups liquid.
Add liquid, rice and taco seasoning to hamburger; stir.
Bring to a boil.
Reduce heat, cover and simmer until liquid is absorbed, about 25 minutes.
Stir occasionally.
Place chips on plate.
Add hamburger mixture and top with cheese, lettuce, avocados, tomatoes and sour cream.
