Chicken Stew - cooking recipe
Ingredients

1 chicken
6 tomatoes
2 Tbsp. tomato paste
3 oz. olive oil
4 Tbsp. butter
cinnamon
salt
pepper
juice of 1 lemon
Preparation

Cut up chicken.
Wash and pat dry.
In a bowl, add lemon juice, cinnamon, salt and pepper to taste.
Add chicken and coat well with mixture.
In a large frying pan, heat butter and oil together and brown chicken.
Remove chicken pieces to a platter. Keep warm.
Peel and chop tomatoes.
Add tomatoes, tomato paste and a cup of water to frying pan containing the butter and oil. Stir and cook tomatoes until very soft.
Return chicken to pan. Cover with sauce.
Cover and cook on low heat until chicken is ready to fall off the bone.
May be served with rice.
