Picante Chicken And Rice - cooking recipe

Ingredients
    6 boneless chicken breast halves, skin removed
    3/4 c. coarsely chopped onion
    3 large garlic cloves, minced
    1 Tbsp. vegetable oil
    1 1/4 c. chicken broth
    1 c. mild red salsa or picante sauce
    1 c. converted rice (Uncle Ben's)
    1 avocado
    1 tomato
    1/2 c. Cheddar cheese
Preparation
    Sprinkle chicken with salt.
    Set aside.
    In a 10-inch skillet, cook onion and garlic in oil for 2 minutes.
    Add chicken broth and salsa.
    Bring to a boil.
    Stir in rice.
    Arrange chicken breasts over rice.
