Coconut Cream Pie - cooking recipe
Ingredients

1/4 stick butter
3/4 c. sugar
1/2 c. milk
1 whole egg
1/4 tsp. salt
1/4 c. cornstarch
2 c. milk
1/2 c. coconut, shredded
1 1/2 Tbsp. coconut extract
10-inch pastry pie shell
Preparation

In double boiler heat 1/4 stick butter and 3/4 cup sugar. Turn heat on high so that the water in the bottom boiler comes to a boil.
In blender, blend 1/2 cup milk, egg and salt.
Mix well. Add cornstarch.
Microwave 2 cups milk to boiling stage.
Add blender mixture and hot milk to mixture in pan.
Stir constantly until thick.
Add shredded coconut and extract.
Stir and pour into baked 10-inch pie shell.
