Hopping John - cooking recipe

Ingredients
    1 lb. black-eyed peas
    1 green pepper, diced
    oregano
    salt and pepper
    1 onion, diced
    1 c. rice
    1/2 lb. salt pork
Preparation
    Soak peas 1 hour.
    Fry salt pork.
    Add vegetables and after frying for a few minutes, add them to the peas; together with the seasoning.
    Let steam at least 20 minutes until the rice is cooked and water is absorbed.
