Sweet Potato Cups - cooking recipe
Ingredients

2 lb. oriental sweet potatoes
3 1/2 Tbsp. butter
1 c. sugar
2 eggs
1/2 c. milk
2 egg yolks, slightly beaten
1 tsp. Mirin (available at oriental groceries)
Preparation

Peel oriental sweet potatoes; cover with water.
Boil and mash.
Add sugar, butter and beaten eggs to the mashed potatoes. Mix well, while potatoes are still hot.
Add milk to the mixture, little by little, mixing well to make a creamy paste.
Put the paste into 12 baking cups (2 1/2 inches).
Gently brush the surface with the mixture of egg yolks and Mirin.
Bake at 480\u00b0 for 15 to 20 minutes, until golden on top.
