Tortellini Minestrone - cooking recipe
Ingredients

2 Tbsp. (1/4 stick) butter or margarine
1 medium size red onion, sliced
2 small yellow squash (approximately 8 oz.), sliced
1 clove garlic, chopped
5 c. canned beef broth
2 oz. day-old Italian bread, cubed (2 c.)
8 oz. refrigerated or frozen meat-filled tortellini
1 (10 oz.) pkg. frozen chopped broccoli, partially thawed under warm running water
12 cherry tomatoes, halved
salt and ground black pepper to taste

This soup thickens as it stands; add a bit more broth if thinner soup is desired.
