Bombs Over Moscow (Shrimp Fried Rice) - cooking recipe

Ingredients
    1/4 c. chicken fat or oil
    2 scallions, chopped
    3 c. raw shrimp, shelled, deveined and diced
    1/2 tsp. salt
    2 eggs, slightly beaten
    4 c. cooked rice (cold)
    3 Tbsp. imported soy sauce
    1/4 tsp. black pepper
    1/8 tsp. ground ginger
    1 c. lettuce, shredded
Preparation
    Set wok over high heat; swirl in half of fat or oil.
    Add scallions and brown lightly.
    Add shrimp; stir-fry 3 minutes. Salt.
    Add eggs; scramble until not quite cooked.
    Remove to a warm plate.
