Diabetic Cake - cooking recipe

Ingredients
    2 c. water
    1 c. applesauce (unsweetened)
    1 Tbsp. liquid artificial sweetener (adjust to taste)
    3/4 c. polyunsaturated oil
    1 1/2 tsp. cinnamon
    2 c. flour
    1 1/2 tsp. nutmeg
    2 c. raisins
    2 eggs
    1 tsp. soda
    1 tsp. vanilla
Preparation
    Cook raisins in water until water is evaporated.
    Add applesauce, eggs, sweetener and oil; mix well.
    Blend in soda and flour.
    Add cinnamon, nutmeg and vanilla.
    Pour into 8 x 8-inch pan (greased and floured).
    Bake at 350\u00b0 for 25 minutes.
