Risotto-Style Potatoes - cooking recipe

Ingredients
    2 lb. all-purpose potatoes
    1 can chicken broth or low sodium broth
    1 onion, finely chopped
    1/2 tsp. thyme
    1/4 c. sour cream or low-fat sour cream
    1/4 c. grated Parmesan cheese
    pepper to taste
Preparation
    Peel potatoes and shred.
    Bring broth, onion and thyme to a boil in saucepan.
    Stir in potatoes.
    Simmer, covered, stirring frequently, 20 minutes, or until tender.
    Remove from heat.
    Stir in sour cream, Parmesan cheese and pepper.
