Squash Croquettes - cooking recipe

Ingredients
    2 c. finely chopped squash
    1 c. finely chopped onion
    1 egg, beaten
    1 tsp. salt
    1 tsp. pepper
    1/2 c. plus 1 Tbsp. all-purpose flour
    hot vegetable oil
Preparation
    Combine first 5 ingredients and mix well. Stir in flour.
    Drop by tablespoonfuls into 1/2-inch of hot oil. Cook until browned, turning once.
    Drain.
    Yields 6 servings.
