Coconut Shrimp With Orange Lime Dipping Sauce - cooking recipe

1 lb. peeled and deveined medium or large shrimp
3/4 c. Bisquick
1 Tbsp. sugar
3/4 c. beer
3/4 c. flour
2 1/2 c. flaked coconut
Preparation

Combine Bisquick, sugar and beer, stirring until smooth.
Set aside. Dip shrimp into flour to coat, then into beer batter allowing excess to drip off. Coat with flaked coconut and set on a parchment paper lined baking sheet. These can be made ahead to this point and refrigerated until you are ready to cook them. Deep-fry shrimp until golden brown, about 2 minutes.
