Salmon And Vegetable Salad - cooking recipe

Ingredients
    12 oz. salmon or trout fillets
    2 carrots, peeled and diced
    1 large zucchini
    1 large turnip, diced
    chopped fresh coriander
    3 Tbsp. tarragon or sherry vinegar
    salt and pepper to taste
    pinch of cayenne pepper
    3 Tbsp. olive oil
    whole coriander leaves to garnish
Preparation
    Skin the salmon fillet and cut the fish into 1-inch pieces. Place in a bowl and add the vinegar, stirring well.
    Leave to stand for at least 2 hours.
