Lemon-Sugar Crepes - cooking recipe

Ingredients
    3 lemons
    3 large eggs
    1 1/2 c. whole milk
    2/3 c. flour
    1/2 tsp. salt
    3 Tbsp. butter, melted
    3/4 c. sugar
    candied lemon peel (optional)
Preparation
    From lemons grate 1/2 teaspoon peel and squeeze 3/4 cup juice.
    Cover and refrigerate.
    In blender at medium speed, mix eggs, milk, flour, salt, lemon peel and 2 tablespoons melted butter until smooth.
    Transfer to medium bowl; cover and refrigerate at least 1 hour or overnight.
    Whisk batter before using.
