Quinoa Tabouleh - cooking recipe

Ingredients
    1 c. quinoa
    2 c. water
    2 medium tomatoes, cut into 1/2-inch cubes
    6 green onions with tops, finely chopped
    1 medium cucumber, cut into 1/2-inch cubes
    1 small green bell pepper, seeded and cut into 1/2-inch cubes
    1 c. finely chopped fresh parsley
    1/2 c. finely chopped fresh mint
    1/3 c. freshly squeezed lemon juice
    1/3 c. olive oil
    1 garlic clove, minced
    1 tsp. fine sea salt
    1/8 tsp. cayenne pepper
Preparation
    Put the quinoa in a wire strainer and thoroughly rinse with hot water to remove any bitter flavor.
