Rice Croquettes - cooking recipe

Ingredients
    2 1/2 c. cooked rice (drain off liquid)
    1 c. grated American cheese
    1/2 c. butter or shortening
    1/2 c. chopped pimento
    1 Tbsp. finely chopped onions
    1/8 tsp. salt and pepper
    1 tsp. baking powder
    1 egg, well beaten
    1/2 c. buttered bread crumbs
Preparation
    Mix all ingredients thoroughly; mold into balls.
    Fry in hot canola oil until brown.
