Pioneer Potato Candy - cooking recipe
Ingredients

1 c. unseasoned, mashed potatoes
1/2 tsp. salt
2 lb. powdered sugar (amount may vary according to water in the potatoes)
1 lb. dipping chocolate or semi-sweet chocolate
2/3 c. ground salted peanuts
Preparation

Combine potatoes, salt and vanilla in a 4-quart mixing bowl. Sift powdered sugar over potatoes.
Cover with damp cloth and set until chilled.
Shape into small balls.
Dip into melted chocolate.
Roll into nuts.
Chill until firm.
