Quick Saucy Chicken Stir-Fry - cooking recipe

Ingredients
    2 Tbsp. olive or vegetable oil
    1 c. broccoli flowerets
    1 c. cauliflowerets
    3/4 c. (2-inch) julienne cut carrots
    1/4 c. green onion slices
    1 garlic clove, minced
    3 chicken breast halves, skinned, boned, cut into 1-inch pieces
    1/2 c. Miracle Whip salad dressing
    1 Tbsp. soy sauce
    1/2 tsp. ground ginger
    2 c. hot cooked rice
Preparation
    Heat 1 tablespoon oil in wok or large skillet over medium-high heat.
    Add vegetables and garlic; stir-fry 4 to 5 minutes or until crisp-tender.
    Remove vegetables from pan.
    Add remaining oil and chicken to pan; stir-fry 4 minutes or until tender.
    Stir in vegetables, Miracle Whip salad dressing, soy sauce and ginger; simmer 1 minute, stirring occasionally.
    Serve over rice.
    Makes 4 servings.
