Peanut Coated Orange Roughy - cooking recipe

Ingredients
    1 lb. orange roughy fillets
    1/2 c. milk
    4 oz. salted peanuts, finely chopped
    1/4 c. flour
    2 Tbsp. butter
Preparation
    Cut fillets into serving size pieces.
    Combine peanuts and flour.
    Dip fish into milk, then into flour mixture, coating well. Heat butter in pan.
    Place fish in pan and cook for 6 to 8 minutes, turning once. (If using frozen fillets, allow an extra 3 minutes.)
    Drain.
    Serve immediately with salad or vegetable.
