Coconut-Pinto Bean Pie - cooking recipe

Ingredients
    1 unbaked 9-inch pie shell
    1 c. cooked pinto beans
    1 c. sugar
    1 c. dark corn syrup
    4 eggs
    1/2 c. shredded coconut
Preparation
    Preheat oven to 400\u00b0.
    Mash pinto beans.
    Add sugar, syrup and unbeaten eggs.
    Beat together with a wooden spoon until sugar is dissolved.
    Stir in coconut.
    Pour into unbaked pie shell.
    Bake for 10 minutes at 400\u00b0, then turn down oven heat to 375\u00b0 and bake another 20 minutes.
    Let cool before serving.
