Pumpkin Coconut Muffins - cooking recipe

Ingredients
    2 eggs, beaten
    1 c. sugar
    3/4 c. vegetable oil
    1 1/2 c. all-purpose flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1 (3 1/2 oz.) pkg. coconut cream instant pudding
    1/2 tsp. nutmeg
    1/2 tsp. ginger
    1/2 tsp. cinnamon
    1 c. canned pumpkin
    1/2 c. chopped nuts (pecans or walnuts)
Preparation
    Combine first 3 ingredients in large mixer bowl.
    Beat at medium speed until well blended.
    Combine flour and next ingredients in medium bowl.
    Add to the sugar mixture alternately with pumpkin.
    Mix after each addition.
    Stir in nuts.
    Pour into greased muffin pans.
    Bake at 350\u00b0 for 20 minutes or until wooden pick inserted in center comes out clean.
    Cool in pan for 10 minutes.
    Makes 15 to 18 muffins.
