Crustless Asparagus Quiche - cooking recipe

Ingredients
    2 tsp. margarine, divided
    1/4 c. chopped green onions
    1 c. chopped asparagus (1/2-inch pieces)
    1/2 c. skimmed evaporated milk
    2 eggs, beaten
    2 oz. cheese, divided
    1/4 tsp. pepper
    dash of salt
Preparation
    Preheat oven to 375\u00b0.
    In small skillet heat 1 teaspoon margarine until bubbly and hot.
    Add scallions and saute until softened.
    In medium bowl combine sauteed scallions with asparagus, milk, eggs, 1 ounce cheese and seasonings.
    Grease 7-inch pie plate with remaining 1 teaspoon margarine and pour in egg mixture.
    Sprinkle with remaining 1 ounce of cheese and bake for 35 minutes.
    Test for doneness; insert knife in center, comes out clean.
    Makes 2 servings.
