Ingredients

6 fresh beets, pared
3 Tbsp. margarine
2 medium onions, sliced
1 tsp. sugar
1 tsp. salt
sprinkle of pepper
lettuce leaves
2 Tbsp. cider vinegar or fresh lemon juice
Preparation

Shred raw beets; place in saucepan with margarine.
Cover with sliced onions.
Sprinkle with sugar, salt and pepper.
Cover with lettuce leaves that have been wetted down.
Cover and simmer 20 to 25 minutes or until tender.
Discard lettuce.
Sprinkle with vinegar or lemon juice before serving.
