Brandied Yam Bake - cooking recipe

Ingredients
    1 20-oz. can pineapple
    3 lbs. yams, cooked and peeled
    1/2 c. butter
    1 c. brown sugar, firmly packed
    1/4 c. brandy
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1/4 tsp. salt
    1/2 c. walnut halves
Preparation
    Drain the pineapple and set aside.
    Cut the yams into chunks. Melt the butter in a large skillet and add the brown sugar, brandy, cinnamon, nutmeg and salt.
    Cook on high heat 3-4 minutes to reduce liquid to a syrup.
    Add the yams and cook until glazed. Spoon into a 3-qt. casserole and arrange the pineapple and walnuts on the top.
    Pour any remaining syrup over the top.
    Bake at 375\u00b0 for 15 minutes.
    Yields 4-6 servings.
