Black-Eyed Pea Salad - cooking recipe
Ingredients

2 (15 oz.) cans black-eyed peas, drained
2 scallions or green onions, sliced
1 red bell pepper, chopped
1/2 green bell pepper, chopped
1/4 c. fresh parsley, chopped
1/4 c. fresh chervil, chopped
1 clove garlic, minced
1/2 c. olive oil
5 Tbsp. red wine vinegar
1 to 2 Tbsp. whole grain mustard
1 fresh jalapeno pepper, minced
salt and freshly ground black pepper
Preparation

Combine first 7 ingredients in large bowl.
In small bowl whisk together oil, vinegar, mustard, jalapeno, salt and pepper. Pour over pea mixture and serve immediately.
