Depression Lima Bean Casserole - cooking recipe

Ingredients
    2 1/2 c. (1 lb.) large, dry lima beans, soaked overnight in cold water and drained
    2 tsp. salt
    2 Tbsp. butter
    1 medium onion, chopped (1/2 c.)
    1/2 green bell pepper, chopped
    1/4 c. catsup
    1/4 c. molasses
    1/2 tsp. liquid red pepper seasoning
    1 Tbsp. vinegar
    1 tsp. dry mustard
    2 c. shredded Cheddar cheese, divided
Preparation
    Microwave directions:
    Place drained lima beans in a 4-quart, microwave-safe casserole.
    Add 4 cups of water and 1 teaspoon of salt.
    Cover; cook on High 14 to 18 minutes.
    Stir; cook on Medium-low for 40 to 45 minutes.
    Drain and reserve liquid.
