Idaho Potato Soup - cooking recipe
Ingredients

5 c. thinly sliced potatoes
1 medium onion, sliced
2 tsp. salt
3 Tbsp. butter
2 c. milk or 1 2/3 c. evaporated milk
1 c. water
1/2 c. sliced carrots (optional, for color)
chopped parsley for garnish
Preparation

Put potatoes and onion in saucepan.
Cover with water; add salt.
Cover and bring to a boil.
Reduce heat and simmer about 10 minutes.
Mash potatoes in their liquid.
Add milk and butter. Stir; if soup is still too thick, add milk.
Keep on medium heat until serving time.
Serves 5.
