Cheddar Stack Cakes - cooking recipe

Ingredients
    1 (8 oz.) pkg. dried fruits
    1/4 c. brown sugar, packed
    1 Tbsp. lemon juice
    1/4 tsp. nutmeg
    1 1/2 c. chopped fresh peaches or thawed frozen peaches
    1 egg
    1 c. milk
    1 1/2 c. biscuit mix
    2 c. shredded mild or sharp Cheddar cheese, divided
Preparation
    In a medium saucepan combine 2 cups water, dried fruit, brown sugar, lemon juice and nutmeg; heat to a boil.
    Reduce heat; cover and simmer 20 to 25 minutes or until thickened, stirring occasionally.
    Stir in peaches; keep warm.
