Turkey Scallopini With Cranberry Sauce(Healthy Dinner) - cooking recipe

Ingredients
    4 turkey breast cutlets
    2 Tbsp. lemon juice
    2 tsp. vegetable oil
    salt and white pepper to taste
    3/4 c. sodium-reduced chicken broth
    1 small onion, chopped
    1 small carrot
    3 Tbsp. red wine vinegar
    1 c. whole berry cranberry sauce
    1 tsp. cornstarch, dissolved in 2 tsp. water
    2 tsp. frozen orange juice concentrate
Preparation
    Pound turkey breasts between moistened sheets of wax paper to 1/4-inch thickness.
    Combine lemon juice and oil.
    Brush on both sides of cutlets.
    Sprinkle with salt and pepper.
    Cover and refrigerate until ready to cook.
