Zucchini Casserole - cooking recipe

6 1/2 c. sliced zucchini (3 to 4 medium)
3 Tbsp. olive oil
1 medium onion, sliced
1 clove minced garlic
28 oz. can diced tomatoes with juice
1 tsp. basil (dried)
1/2 tsp. oregano (dried)
1/2 tsp. garlic salt
1/4 tsp. pepper
1 1/2 c. dry stuffing mix
1/2 c. Parmesan cheese
3/4 c. shredded Mozzarella
Preparation

Saute zucchini in 1 tablespoon oil until soft (not mushy), then set aside. Saute onions and garlic in 2 tablespoons oil until soft. Add next 5 ingredients and simmer, uncovered, for 10 minutes. Put zucchini in 9 x 13 pan and cover with tomato mixture; stir. Top with stuffing. Sprinkle on Parmesan cheese. Cover and bake at 350\u00b0 for 20 minutes. Uncover. Top with Mozzarella and bake for 10 minutes.
