2 c. sugar
5 egg yolks
2 Tbsp. butter
1/2 tsp. salt
juice and rind of 3 lemons (add enough water to make 1 c. liquid)
3 egg whites
6 Tbsp. sugar
3 Tbsp. water or lemon juice
pinch of salt
