Strawberry Delight Salad(Diabetic) - cooking recipe

Ingredients
    1 (3 oz.) pkg. sugar-free strawberry Jell-O
    3/4 c. chopped, fresh strawberries
    1 c. plain, low-fat yogurt
    1 tsp. vanilla extract
    sugar substitute to equal 2 tsp. sugar
Preparation
    Prepare Jell-O according to package directions; chill until slightly thickened.
    Crush strawberries in blender or by hand; add to Jell-O mixture.
    Add yogurt, vanilla and sugar substitute. Stir mixture until well blended.
    Pour into 4 individual molds. Chill until set.
    Unmold and serve on lettuce leaf.
    Yields 4 servings.
