Potato Candy - cooking recipe

Ingredients
    1 egg-size potato, boiled
    2 to 3 c. confectioners sugar
    1/2 tsp. vanilla
    1 tsp. butter
    peanut butter
Preparation
    Smash cooled, boiled potatoes.
    Blend in vanilla and butter. Blend in confectioners sugar until mixture is stiff.
    Roll out mixture on floured surface leaving mixture about 1/4-inch thick. Spread a thin layer of peanut butter (smooth or crunchy) on top of mixture.
    Roll into a log.
    Let set in refrigerator for 1 hour. Cut log into 1/4 to 1/2-inch slices.
