Chipotle Pork Posole - cooking recipe
Ingredients

1 lb. pork tenderloin, cut into 1/2-inch pieces
2 medium onions, chopped
1 red bell pepper, chopped
15 oz. yellow hominy, rinsed and drained
14.5 oz. stewed tomatoes
14.5 oz. chicken broth
2 chipotle peppers (canned), chopped and mashed
1 Tbsp. olive oil
1/8 tsp. salt
Preparation

Brown pork in olive oil. Drain; put in pot with onions, bell pepper, hominy, tomatoes, broth and salt. Bring to boil; reduce and cook on medium-low until meat is tender. Add chipotle peppers sparingly if you do not want it too hot.
