Nicoise Green Beans - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 medium onion, chopped
    2 sticks celery, chopped
    1 lb. string (green) beans (fresh or frozen)
    1 (16 oz.) can chopped tomatoes
    4 Tbsp. vegetable stock, tomato juice or water
    1 bay leaf
    1/2 c. fresh parsley
    basil, oregano, salt and pepper to taste
Preparation
    Saute onion and celery in large frying pan with the oil until lightly browned.
    Boil or steam beans until tender (about 10 minutes).
    Drain and set aside.
    Add tomatoes, stock, juice or water, bay leaf, parsley and other spices to saute.
    Stir well and simmer for 20 minutes, uncovered.
    Continue to season to taste. Add the cooked beans to the sauce and stir.
    Bring to a simmer and cook for 2 to 3 more minutes.
    Serve immediately.
    Serve with pasta, rice or potatoes.
