Chicken Breast Diane - cooking recipe
Ingredients

4 lg. boneless chicken breasts
1/2 tsp. salt
1/4 tsp. black pepper
2 Tbsp. salad oil
2 Tbsp. butter
3 Tbsp. chives
juice of 1/2 lemon
3 Tbsp. chopped parsley
2 tsp. dijon mustard
1/4 c. chicken broth
Preparation
-
Heat 1 Tbsp. each of oil and butter in skillet.
Cook chicken breasts 4 minutes on each side, no longer.
Put on serving platter.
Add spices to pan cook 15 minutes, whisking constantly. Whisk in broth.
Stir until smooth.
Whisk in remaining butter and oil.
Pour sauce over chicken.
