Grandma'S Baked Manicotti - cooking recipe
Ingredients

2 eggs, beaten (or substitute)
1/4 c. chopped fresh parsley
1/2 tsp. salt
1/2 c. grated Parmesan cheese
3 c. low-fat Ricotta cheese
4 Tbsp. diced onion
16 manicotti shells (uncooked)
32 oz. tomato sauce
2 to 3 Tbsp. grated Parmesan cheese (optional)
Preparation

Mix eggs and parsley in large bowl.
Add salt, Parmesan and Ricotta cheeses and onion.
Mix well.
Stuff the uncooked manicotti shells with the cheese mixture.
Preheat oven to 400\u00b0. Pour half the tomato sauce onto baking dish.
Arrange the stuffed manicotti in the pan.
Pour the rest of tomato sauce over the manicotti.
Cover and bake for about 20 minutes.
You may sprinkle Parmesan cheese over manicotti immediately before serving.
Yield: 6 to 8 servings.
