Vanilla Tofu Ice Cream - cooking recipe

Ingredients
    2 Tbsp. kosher gelatin (unflavored)
    1/2 c. water (cold)
    1 c. cashews (raw)
    1 c. boiling water
    10 oz. pkg. tofu
    3/4 c. honey
    2 Tbsp. vanilla
    1/2 tsp. salt
    1 1/2 c. ice with water
Preparation
    Soak gelatin in 1/2 cup water in blender for 5 minutes. Whiz briefly.
    Add
    1
    cup boiling water and blend to dissolve gelatin. Add
    cashews and blend smooth.
    Add remaining ingredients
    and blend,
    gradually
    adding
    ice
    cubes with water. Blend
    well. Freeze.
    Remove from freezer 30 minutes prior to serving for easier scooping.
